Ingredients (4 servings)

  • 2 quality frankfurters
  • 1 medium onion
  • 1 tablespoon lard or oil
  • 1 tablespoon plain flour
  • 1 tablespoon sweet ground paprika
  • 1 l potato or meat broth (can be replaced with water)
  • 2 small potatoes
  • 1 clove of garlic
  • Marjoram to taste
  • Salt and pepper
  • Optional: chili or hot pepper

‍ Preparation procedure

  1. Peel the onion and chop finely.
  2. Heat the lard in a pot, add the onion and let it soften.
  3. Sprinkle with flour and fry briefly until lightly browned.
  4. Add the ground paprika, immediately pour in the broth (or water) to prevent the paprika from becoming bitter.
  5. Add the diced potatoes and cook for about 10 minutes.
  6. Cut the sausages into rounds, add to the soup and cook for another 5 minutes.
  7. Season with salt, pepper, garlic and marjoram.
  8. Boil briefly and set aside.

Tip: Frankfurt soup tastes even better the next day.
